Banon is a small, ancient cheese. It is said that Banon was already served at the table of the Roman emperors.
Its geographical origins lie around the town of Banon, in the dry pastures of Haute-Provence.
This artisanal cheese is made from goat's milk. Refined in chestnut leaves bound with a strand of natural raffia, Banon is thus isolated from the air.
Slightly tannic, these chestnut leaves contribute to Banon's specific taste and help to preserve it. The paste is supple, becoming creamy as it matures in humid cellars.
In the Banon region, it's best enjoyed by the spoonful, accompanied by a chilled red or white Provencal wine.
