A cheese already known in Roman times
It takes around 500 liters of milk to make a Beaufort weighing between 40 and 50 kilos.
The cheese is made from the milk of Beaufort cows, also known as Tarines or Tarentaises.
Beaufort cheese comes in 3 versions: Beaufort, Beaufort d'été and Beaufort Chalet d'alpage (made in mountain chalets).
Maturation takes at least 4 months in cool, humid cellars (92% humidity). The cheeses are constantly rinsed and rubbed with salt water. As the ripening process is prolonged, the paste takes on a yellow hue and the taste becomes more complex and stronger, with a very subtle salty aftertaste. No matter how long the ripening process, Beaufort is a superb cheese with a taste that caresses the taste buds for a long time. It's easy to recognize by its concave heel. It belongs to the AOP family.
When young, Beaufort is fruity and mild, then as it ages its taste becomes more complex, with a hint of salt.
Winter cheese is white in color, while summer cheese is pale yellow.
