"A meal without cheese is like a beauty missing an eye", said the famous gastronome Jean Anthelme Brillat Savarin.
In the 1930s, Father Androuet, well known for his extensive cheese culture, attributed this fancy name to a triple-cream cheese in homage to the man who advocated the consumption of cheese at every meal. Brillat Savarin was an immediate success, and a few manufacturers still carry on the tradition.
A mild, unctuous flavor typical of double-cream cheeses. The paste is very creamy, covered with a white down, and small orange tips appear with longer maturing.
Brillat savarin goes very well with a glass of Champagne.
