The Carre d'Ambre is a goat cheese made in the Jura area, where it is rather unusual to see any goat in the mountain. So, as you can figure out, the Carré d'Ambre is an artisanal goat cheese produced by a sole farmer and very hard to find even in France!
It has a square shape, the pate is white ivory and an orange rind. During its maturation, the cheese is washed with marc de Jura (brandy). It has a strong flavor but a subtil and slightly salted taste. Pairing wine vin d'Arbois or dark beer.
