Ladle-moulded PDO goat's cheese

The Poitou-Charentes region is the cradle of goat cheese.
Charles Martel's victory over the Saracens at Poitiers in 732 had the secondary effect of giving birth to the goat cheeses ("chebli" in Arabic, hence Chabichou) that made Poitou famous.
Chabichou is ladled into truncated, perforated sandstone or wooden pots, the bottoms of which are embossed with the cheese's initials: CDP (Chabichou du Poitou).
In 1990, Chabichou was awarded the AOC label. It has a goaty aroma and a delicate, unctuous flavor, with a sensation of creaminess and a hint of acidity. Its thin rind shows white, yellow or bluish surface mold.
The paste is firm and should retain a certain suppleness, but may become brittle after prolonged ripening.
