Here is with no doubt one of the most consumed cheese on the world ! It appears in England on the XII century. Tightened in a cloth, it was matured for 5 months and had a white-yellow colour. Today big industrial cheese dairies are manufacturing Cheddar.
The cheese is then matured under plastic conditioning and its dough is orange. Cheddar has a light taste of hazelnut. It can be sour if cows grazed wild garlic, or sweet if the meadows present only lucerne. At the end of 8 months of refining, Cheddar becomes very smooth.
