Produce near Chavignol, in one farm, this cheese is the big (by the weight) cousin of the crottin de chavignol.
You can taste it at 3 different stages of maturation. Fresh, during the summer, it has a milky taste that will fit with a rose wine.
Half-dry, the taste beginns to be more nutty and it is at this stage of maturation that the cheese will perfectly married a sancerre wine (at least a sauvignon grape wine) Dry, the cheese has a strong and nutty taste, hard to cut and will fit a Chinon wine.
