The best-known cheese in Auvergne, Cantal is also the oldest of all cheeses. Since then, its popularity has continued to grow.
2,000 years ago, the difficult terrain and wintry climate of the Cantal region led the ancestors of the master cheesemakers to produce a large, "carryover" cheese, to build up an ever-available food reserve.
Cantal joined the prestigious AOC family in 1980. Its distinctive, unmistakable flavor comes from the subtle combination of a thick, golden rind with red blotches, and a firm, well-bound, supple, homogeneous paste.
Cantal has the scent of fresh undergrowth and the light perfume of high broom, which give it its deliciously authentic terroir flavor.
Massive and stocky in shape, yet soft to the bite, this cheese has drawn its character from the heart of Auvergne, from a verdant countryside where mountain thunderstorms alternate with the sunshine of high pastures in the hollows of thousand-year-old volcanoes.
