Each Comté wheel is graded by a panel of professionals before it goes on sale, guaranteeing the quality of this cheese.
Its unctuous paste acquires a fruity flavor for summer milks, and a hazelnut flavor for winter milks.
The older the Comté, the more it develops a slightly salty taste.
As it matures, its golden-yellow rind thickens and its paste becomes increasingly yellow.
