Short Description:
Famous Italian cheese, aged 14 months
The term "Parmesan" designates a group of Italian cheeses to which Parmigiano Reggiano belongs, a great classic of Italian cuisine.
Produced since the 13th century, praised by Boccaccio a century later, it was already being served grated over pasta in the 16th century. It was introduced to France by a Duchess of Parma who married a grandson of Louis XV.
Produced between April and November, it is characteristic of the provinces of Parma, Mantua and Bologna. Moulded into large wheels, it is aged for at least 24 months.
A distinction is made between nuevo (one year), vecchio (2 years), stravecchio (3 years) and stravecchione (4 years and more).
The rind is thick and may have a blackish tinge, without altering the taste. Golden yellow in color, its hard, brittle paste sometimes shows a slight ooze.
Its very fruity flavor, slightly spicy at the end, lasts a long time in the mouth. Its grainy consistency has earned it the generic name grana in Italy.
Present Parmigiano in fine shavings rolled up on themselves as an aperitif, with a glass of Champagne. Fresh, it will look great on a cheese platter, and should be enjoyed with a strong red wine.
