Tomme Grise de Chèvre, also known as Tomme de Chèvre, is made in Savoie and Haute Savoie, mainly in the Tarentaise and Maurienne valleys.
This cheese has been made from raw goat's milk since the 17th century. Ripened for at least 8 weeks, its rind turns gray.
When young, it develops powerful goaty aromas, then with age, hints of hazelnut appear. But one of its hallmarks is its endless length in the mouth...
This cheese is best enjoyed with local white wines such as Apremont or Roussette de Savoie.
