Casanu was born from the combination of two Corsican skills: the subtle marriage of a melt-in-the-mouth ewe's milk cheese and Corsican chestnut beer.
Made from 100% Corsican sheep's milk, this washed rind is regularly rubbed with a mixture of water and chestnut beer, a traditional and emblematic Corsican specialty. This step allows it to develop subtle woody notes and a beige-orange rind.
Casanu rubbed with chestnut beer is the fruit of 100% Corsican know-how, a tender-hearted cheese that has won several awards at the Concours Général Agricole.
