Famous Franche Comté PDO cheese
Morbier cheese (meaning "little village"), originally produced in the village of Morbier, was invented in the 19th century.
Farmers would protect the remaining curds in the Comté vat until the following morning by covering them with a layer of softwood ash, known for its insecticidal properties.
A new layer of curd was then added to the previous one. The whole was pressed and placed in a cool, damp cellar.
Ripened for 2 or 3 months, the rind was then brushed with salt water ("morgée"). This tradition is protected by the Franche-Comté regional label and has been awarded the PDO.
Beneath the firm, slightly cracked rind, the paste is soft and unctuous, offering subtle herbaceous aromas and a pronounced fruity flavor.
The cheese then develops a fine, light-gray to beige rind, with a sooty bar running through it, the hallmark of its identity.
