This blue-veined cheese is similar in appearance to piquant Gorgonzola, but with a lighter-colored rind. The paste is white and rich in thick green veins. The taste is extremely creamy and melting in the mouth, yet capable of leaving a sensation of freshness and varied aromas. Without being too piquant, the flavor is milky and mild. The note of goat's milk leaves a velvety aftertaste that blends perfectly with the complex taste of the marbling.
