Low country cheese, flavoured with cumin and mustard seeds

First produced in Holland in the 16th century, Gouda was made on farms near the village of the same name around Rotterdam.
The cheese quickly became popular and successful. Production increased with the opening of industrial dairies in the early 20th century.
To determine its quality, connoisseurs "sound" it by tapping. If it sounds full, it's good. It then belongs on a platter.
The hallmark of genuine Gouda (beware of plagiarism!): all wheels are marked with a casein plate. There are two types of Gouda, one with 40% fat, the other with 48% (called volvet).
Gouda is sometimes flavored, most often with caraway, but also with mustard seeds.
When young, Gouda can be eaten any time, cut into strips.
Its paste is very hard, light yellow or ochre in color, depending on the length of maturation.
Old Gouda is best served with a grand cru wine, as it enhances the flavor of the wine without imposing its own taste.
