PDO since 1991, natural orange cheese
A close relative of Epoisses, Langres is a vigorous cheese with a powerful bouquet.
It bears the name of the Haute-Marne town from which it originates.
Known since the 18th century, it was not awarded the AOC label until 1991, before which time it was only a regional and almost confidential cheese.
During ripening in damp cellars, it is regularly washed in lightly salted water (brine) with the addition of a natural orange coloring agent, rocou. This is when the cheese forms its beautiful orange rind, which becomes darker the longer it matures.
In the past, the cheese was matured in damp cellars on oat straw. It is also sometimes eaten barely ripened, its color remaining white-ivory and its taste much less pronounced.
This cheese is never turned over during its ripening period, which is why it sags a little to form a hollow called a "fountain" in the center. Langres is covered with a fine white down at the heart of the fountain, into which cheese lovers pour a few drops of Marc de Champagne before tasting it.
It's a delight for lovers of cheeses with character. Its taste is creamy and rich with the subtle flavors of natural meadows. It has a smooth, melt-in-the-mouth blond paste.
