One of Normandy's oldest cheeses
A soft cheese with a washed rind, Livarot is one of Normandy's oldest cheeses, and the most widely consumed in the region at the end of the 19th century.
Chroniclers of the time described it as the "meat of the poor", due to its highly nutritious qualities. It is encircled by five bands of water rushes, cultivated specifically for this purpose, which prevent it from collapsing during ripening. C hese five bands, reminiscent of a colonel's five stripes, earned it the nickname "colonel". Today, they are more folkloric than useful, especially as industrial dairies have not hesitated to replace them with green paper strips.
Enthusiasts delight in its strong smell and full, penetrating flavor. Awarded the AOC label in 1975, "colonel" is produced in a very restricted area of the Pays d'Auge. Depending on the length of the maturing period, the deep golden-yellow paste is more or less piquant and fragrant.
During the ripening process, Livarot is colored orange-red with natural rocou dye (a South American plant), giving the smooth, shiny rind a warm, refined reddish-brown hue.
