Short Description:
Famous northern PDO cheese
Legend has it that this cheese was invented by a monk in 962. It soon became famous, and was the delight of many kings (Philippe Auguste, St Louis, Charles VI, Charles Quint, François I) and celebrities (Fénelon, Turenne).
During ripening, the cheese is regularly turned over and rinsed in a brine bath, then brushed. Washing and brushing eliminate the natural white molds and facilitate the development of the red bacteria that give the rind its characteristic color.
This cheese takes pride of place on a platter. In the kitchen, it is used in traditional recipes such as flamiches or cheese tarts.
Maroilles exhales a persistent aroma and leaves a full-bodied flavor on the palate.
Its paste is golden, soft and oily. Its rind turns from yellow to orange to red, depending on the stage of ripening.
