Famous cheese from the north of France, also known as boule de Lille.
Also known as Boule de Lille, French Mimolette is a semi-hard cheese (half-soft, hence the name Mimolette).
It's at its best in the kitchen: on canapés, diced in salads or roasted in gratins if the Mimolette is old.
Mimolette reaches its full potential when aged for 18 months. Its paste has become brittle and dry, and its taste is salty and highly aromatic.
The making of French Mimolette is modelled on that of Dutch Mimolette.
In the 17th century, Colbert banned the import of foreign cheeses into France, and the French began to make their own.
It has been officially recognized since 1935, the date of a treaty between France and Holland.
Its natural rind is gray and uneven, the result of the action of cirons, micro-organisms that aerate the rind and allow ripening.
The orange color of the paste is due to the natural coloring agent rocou.
