Moliterno belongs to a category of Pecorino cheeses, mainly from southern Italy, known as Canestrato, which means made in a basket.
Perfect for the festive season, this cheese is aged for six months before the black truffle is added to the mix.
When the cheesemaker deems the untruffled wheels delicious enough, they are sent north - to truffle country - to be pierced and filled with a rich truffle paste. The result is a breathtaking cheese that we recommend pairing with great, powerful Italian red wines.
