Mont Ventoux
It's a goat cheese produce around the famous Mont Ventoux - the reason why of its name - which is one of the symbol of the Provence area, also called le Mont chauve (Bald mount). It has an original shape : Alongated cylinder such as the Provence mount.
Its pate is smooth and becomes hard when it get matured. You can find 2 varieties of the cheese: one with herbes de Provence, one with charcol on the botom of the cheese. Its taste is smooth and goaty and get stronger during its maturation. Pair this cheese with a rose de Provence such as Bandol. Enjoy!
