Alsace cheese created in a monastery
Munster cheese originated in a monastery in the valley of the same name. It was created in the 7th century by Benedictine monks, whose rule prohibited the consumption of meat in favor of milk and its by-products.
During the maturing process, the Munster cheese is turned every two days and rubbed with lukewarm Vosges water. This encourages the development of red ferments, which protect the cheese as it ages.
To give this cheese an original touch, you can enjoy it with caraway seeds and a dark beer.
It was awarded AOC status in 1978. Its typical, unobtrusive aroma goes hand in hand with a frank, spicy yet balanced flavor.
Its strong scent of thatch flora reflects that of the high pastures of the Vosges, rich in thick grass and aromatic plants.
Slightly ridged and moist, the rind turns yellow and then orange-red with repeated washing. Under the fine, smooth rind of Munster cheese lies a supple, creamy paste.
