This cheese brings together two French regions: Ossau for the Béarn valley and Iraty for the beech forest of the Basque country.
This cheese releases all its hazelnut flavor when produced during the transhumance period from June to September in Basque cayolars and Béarn cajulas (stone-built mountain huts).
The flavor of this cheese is mild, with aromas of hazelnut and fresh milk. This cheese has a dense, compact paste, pale yellow in color and no holes.
