Short Description:
Famous pyramid-shaped goat's cheese
Pouligny Saint Pierre, nicknamed the "Eiffel Tower" because of its pyramid shape, is produced in the Brenne valley in the Centre region of France.
This region enjoys a mild climate that supports a rich flora. Alpine goats produce milk that is fragrant with the scents of moorland and sainfoin.
The curds are ladled into molds with holes in the shape of a truncated pyramid. After draining, unmolding and salting, it is placed on drying racks or straw mats.
Less well known than its cousins Sainte Maure de Touraine and Selles sur Cher, it's nonetheless the favorite of unconditional goat cheese enthusiasts.
On the palate, it has a tangy, nutty flavor. Its natural rind is fine and bluish.
Pouligny Saint Pierre has a slight goaty aroma, with a hint of straw.
