The best-known cheese in the Pyrenees.
It's named after the village where it's made, near Couserans, in the county of Foix.
Legend has it that it was favored by Louis VI le Gros, who passed through the region in the 12th century.
Bethmale is certainly the mildest cow's milk cheese in the Pyrenees.
Semi-hard, pressed but not cooked, it has a strong cellar aroma.
During maturing, the cheese is turned and brushed daily.
Enjoy with black cherry jam.
