Short Description:
A Savoy cheese made from cow's milk, served as a fondue with charcuterie and potatoes.
Cheese has been an essential part of the Valaisan alpine economy for many centuries.
Since Roman times, it has even been used as a currency of exchange.
To this day, ancestral methods have preserved the techniques used to produce Raclette, a round, semi-hard cheese with a natural brown to orange rind and a smooth, velvety paste.
Raclette is made exclusively from whole raw milk, delivered twice a day to the cheese dairy.
Each wheel is matured for at least three months. The name of the valley in which it is produced is inscribed on the heel.
Raclette's taste is mild, aromatic and straightforward.
It owes its name to the way it has long been eaten: cut down the middle, heated and then scraped. Raclette is just as tasty eaten by hand. It can also be kept for several months and cut into thin slices with a planer to produce rebibes, a popular aperitif.
