Made from cow's milk fed on the rich, fragrant grass of Auvergne's volcanic plateaus, Saint-Nectaire fermier (identified by its oval green casein plaque) is matured in former wine cellars.
Its creamy yellow paste has a pronounced local flavor.
When matured, its thick rind gives off a straw-like aroma.
