Famous traditional Swiss cheese
Traditional Gruyère is produced in the cantons of Fribourg, Neuchâtel and Vaud.
It belongs to the family of cooked cheeses with a brushed rind.
For the Swiss, Gruyère takes its name from the Counts of Gruyère, whose coat of arms featured a crane.
This family first settled in the canton of Fribourg in the 9th century.
For the French, who also call their products from Savoie, Burgundy and Franche-Comté "Gruyère", the word derives from gruyer, a man who in the Middle Ages collected taxes in the form of timber or cheese.
That said, the French misuse the word "gruyère" to designate all pressed, cooked cheeses in the shape of a large wheel.
Made from raw milk, Gruyère is aged for at least 6 months. The cheese wheel measures between 40 and 65cm in diameter, is around ten centimetres thick and weighs between 20 and 50kg.
Genuine Swiss Gruyère has an ivory-colored paste, slightly sticky from the brine treatment. Its flavor is more or less fruity, depending on the time spent in the cellar.
And the holes usually found in French Gruyères are rare!
A real delight, this cheese can be enjoyed at the end of a meal, served on a platter, or accompanied by walnuts and slices of melting pear.
