One of Lombardy's oldest cheeses, Taleggio dates back to the 9th century, and was originally made from the milk of cows returning from transhumance to the small town of Taleggio, in the province of Bergamo.
The longer the cheese is matured, the more full-bodied its flavor. Unpressed soft cheese, straw-yellow with a pinkish rind, fine and supple.
