A cow's milk cheese produced in Savoie, its mild, delicate taste comes from maturing in several stages.
Tomme de Savoie is relatively low in fat, as it is traditionally made with butter.
There are many varieties of Tomme, each generally named after its village of origin.
Winter Tomme, made from the milk of hay-fed animals, is very different from summer Tomme, which is made on the mountain pastures.
Tomme has a sweet, fruity taste, sometimes with a slight herbaceous flavour.
Ripening, which can last several months, enables the rind to thicken and take on the rustic appearance characteristic of Tomme, as well as a gray color pigmented with yellow or red.
