Goat's cheese in the shape of a truncated pyramid
The story goes that Valençay took on its pyramid shape to celebrate Napoleon's return from his Egyptian campaigns. Another legend.
The farmers simply wanted to imitate the shape of the church tower in the village of Valençay.
Its squat pyramid shape is a common feature of several Berrichon goat cheeses (Pouligny Saint Pierre, Levroux, etc.).
During ripening, it is placed for 4 to 5 weeks in a ventilated hâloir, where it is gradually covered with a thin, blue-spotted skin.
Valençay cheese retains its softness and long-lasting hazelnut taste for a long time, thanks to the fine charcoal powder used to preserve it. The texture of its paste is fine and unctuous.
A dry white wine from Valencay (Sauvignon grape) is the ideal companion for this cheese.
