Goat's cheese in the shape of a small crottin
Genuine Crottin is made from the milk of Alpine goats, recognizable by their brown color.
It's one of the few cheeses that can be eaten at several stages of ripening, with just as much gustatory pleasure.
Just unmolded from its faisselle, it is eaten fresh, often coated with herbs, and has a nutty flavor.
After 6 weeks, the cheese hardens and becomes semi-dry, with a more pronounced taste. After that, the paste is brittle, the Crottin is dry or very dry, and its goaty taste (goat's milk) is stronger, but never pungent. Its paste is ivory-white, tending towards yellow as it matures.
